Blackberry banana bear swiss roll

🧁 Ingredients:

  • Cake Roll:
    • 4 large eggs
    • 100g sugar
    • 100g cake flour
    • 1 tsp vanilla extract
    • Pinch of salt
  • Filling:
    • 1 ripe banana (mashed or sliced thinly)
    • 150ml heavy cream (whipped)
    • 2 tbsp powdered sugar
    • 2–3 tbsp blackberry jam (strained)
  • Decoration (Optional for bear face):
    • Chocolate chips (eyes & nose)
    • Cocoa powder or melted chocolate for outlines
    • Whipped cream for cheeks

🧑‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F). Line a jelly roll pan with parchment.
  2. Make the sponge: Beat eggs and sugar until pale and fluffy. Add vanilla. Gently fold in sifted flour and salt.
  3. Bake for 10–12 minutes until just golden. Let cool on a towel dusted with powdered sugar.
  4. Prepare filling: Whip cream with powdered sugar. Fold in mashed banana.
  5. Assemble: Spread a thin layer of blackberry jam, then the banana cream. Roll gently.
  6. Decorate: Chill, then slice and decorate each slice as a bear face using chocolate and cream.
