Blueberry Coffee Cake Recipe
✅ Ingredients
For the Cake:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream or plain Greek yogurt
- 1/4 cup milk
- 1 1/2 cups fresh or frozen blueberries (if frozen, don’t thaw)
For the Streusel Topping:
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/4 cup cold unsalted butter, cut into cubes

- Preheat Oven
Preheat to 350°F (175°C). Grease and flour an 8×8-inch (20×20 cm) baking pan or line with parchment paper. - Make Streusel
In a bowl, mix brown sugar, flour, and cinnamon. Cut in cold butter using a pastry cutter or fork until crumbly. Set aside. - Prepare Cake Batter
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy (2–3 minutes).
- Beat in eggs one at a time. Add vanilla.
- Mix in sour cream and milk.
- Gradually add the dry ingredients until just combined.
- Gently fold in blueberries.
- Assemble the Cake
- Spread batter evenly in the prepared pan.
- Sprinkle the streusel evenly over the top.
- Bake
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. - Cool and Serve
Let cool for 15–20 minutes. Slice and enjoy warm or at room temperature.
