Soft pastries with jam

Ingredients

200 gr flour ( * )
50 gr starch
1 egg ( 50 gr )
100 gr sugar
125 gr butter
1 cucc.no baking powder ( 2 gr )
A teaspoon of vanilla paste
A pinch of salt

( * ) Version for gluten intolerants

For gluten intolerants, replace 00 flour with rice flour or use 250 of gluten-free mix to replace flour and starch / cornstarch.
In my recipes I use the Schär universal gluten free mix.

Procedure

The basic recipe for these soft pastries is nothing more than the recipe for Soft shortcrust pastry, which I report for completeness anyway.

Procedure with robot and leaf ( whip K )

Sift the flour with the baking powder, pour into the robot bowl and whip the leaf. Add the butter at room temperature into small pieces and operate the robot at speed 2, until the sandy mixture ( about 1 minute ) is made.
Add the sugar, the beaten egg with the salt, the grated peel and the lemon juice; stir, always at low speed, until the dough is collected ( about 1 minute ).
Remove the whisk and, always in the bowl, collect the dough by pressing it with your hands; pour it on the pastry board, form a loaf with an elongated shape, wrap it in plastic wrap and put it in the refrigerator for an hour or two.
