Vegan Cookie Bars

🛒 Ingredients (makes ~12 bars)

  • 1 Tbsp ground flaxseed + 2 Tbsp water (flax “egg”)
  • ¾ cup melted vegan butter
  • 1 cup brown sugar + ¼ cup granulated sugar
  • 2 tsp vanilla
  • 2¼ cups all‑purpose flour
  • 1 Tbsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup non‑dairy chocolate chips (plus extra for the top)

👩‍🍳 Directions

  1. Preheat oven to 350 °F and line a 9×13‑inch pan.
  2. Mix flaxseed + water; set aside to thicken.
  3. Stir melted butter with both sugars, then add flax egg and vanilla.
  4. Gently fold in flour, cornstarch, soda, salt until combined.
  5. Mix in chocolate chips, reserving a few.
  6. Press dough evenly into pan, top with reserved chips.
  7. Bake ~30 minutes until golden on edges. Cool before slicing.
