Best Vanilla Cake

Ingredients:

For the Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup (240ml) whole milk

For Vanilla Buttercream Frosting:

  • 1 cup (226g) unsalted butter, softened
  • 3 ½ cups (440g) powdered sugar
  • 2 tsp vanilla extract
  • 2–4 tbsp heavy cream or milk

Instructions:

  1. Preheat oven to 175°C (350°F). Grease and flour two 8-inch round cake pans.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In a large bowl, cream butter and sugar until light and fluffy (3-4 minutes).
  4. Add eggs, one at a time, beating well after each addition. Mix in vanilla.
  5. Alternate adding flour mixture and milk to the batter, beginning and ending with flour.
  6. Divide evenly between pans and smooth tops.
  7. Bake for 30–35 minutes or until a toothpick comes out clean.
  8. Let cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Frosting:

  1. Beat butter until creamy.
  2. Gradually add powdered sugar.
  3. Mix in vanilla and 2 tbsp cream, adding more for desired consistency.
  4. Frost cooled cakes and decorate as desired.
