Applesauce Cake


Ingredients (9×13 or 2-layer 8″ cake):
- 2¼ cups all-purpose flour
- 1 tsp baking soda & 1 tsp baking powder
- 1 tsp ground cinnamon, ½ tsp ginger, & ¼ tsp nutmeg or allspice
- ¾ cup granulated sugar + ½ cup brown sugar
- 2 large eggs
- 2 cups unsweetened applesauce
- ¾ cup oil (vegetable or canola)
- 1 tsp vanilla
- Optional mix-ins: raisins and walnuts (≈½ cup each)


Instructions:
- Preheat oven to 350°F (175°C). Grease and line pan(s).
- Whisk dry ingredients in a bowl.
- In another bowl, beat eggs, sugars, applesauce, oil, and vanilla until smooth.
- Stir dry into wet until just combined. Fold in optional raisins & nuts.
- Bake 25–40 min (25 min for sheet; 40 min for deeper pans), until a toothpick comes out clean .
- Cool before frosting or dusting.
