Plum Yogurt Cake

Ingredients

  • 1½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) vegetable oil (or melted butter)
  • 1 cup (240g) plain yogurt (full-fat or Greek works best)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3–4 ripe plums, pitted and sliced
  • Optional: 1 tbsp brown sugar or honey (for sprinkling on top)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat sugar and oil together until well combined. Add eggs one at a time, beating well after each.
  4. Mix in yogurt and vanilla extract until smooth.
  5. Gradually fold dry ingredients into wet ingredients until just combined. Don’t overmix.
  6. Pour batter into prepared pan and smooth the top.
  7. Arrange plum slices on top of the batter, gently pressing them in. Sprinkle with brown sugar or honey if desired.
  8. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack.
  10. Dust with powdered sugar before serving, if desired.

Tips:

  • Use ripe, juicy plums for the best flavor.
  • Try mixing different colored plums for a pretty effect.
  • Serve with whipped cream or Greek yogurt on the side.
  • This cake stores well for 2–3 days in an airtight container.
