Ingredients
- 1½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (150g) granulated sugar
- ⅓ cup (80ml) vegetable oil (or melted butter)
- 1 cup (240g) plain yogurt (full-fat or Greek works best)
- 2 large eggs
- 1 tsp vanilla extract
- 3–4 ripe plums, pitted and sliced
- Optional: 1 tbsp brown sugar or honey (for sprinkling on top)
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat sugar and oil together until well combined. Add eggs one at a time, beating well after each.
- Mix in yogurt and vanilla extract until smooth.
- Gradually fold dry ingredients into wet ingredients until just combined. Don’t overmix.
- Pour batter into prepared pan and smooth the top.
- Arrange plum slices on top of the batter, gently pressing them in. Sprinkle with brown sugar or honey if desired.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack.
- Dust with powdered sugar before serving, if desired.
Tips:
- Use ripe, juicy plums for the best flavor.
- Try mixing different colored plums for a pretty effect.
- Serve with whipped cream or Greek yogurt on the side.
- This cake stores well for 2–3 days in an airtight container.
