Tutti Fruity Cake

✅ Ingredients:

  • 1½ cups (180g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ cup (150g) sugar
  • ½ cup (120ml) oil or unsalted butter, melted
  • ¾ cup (180ml) yogurt (thick, plain)
  • 1 tsp vanilla extract
  • ½ cup (120ml) milk
  • ½–¾ cup tutti frutti (plus 1 tsp flour to coat)
  • Optional: pinch of salt

🧁 Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. In a bowl, sift flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk yogurt, sugar, oil, vanilla, and milk.
  4. Fold dry ingredients into wet gradually.
  5. Coat tutti frutti in flour and fold into batter.
  6. Pour batter into pan and tap gently.
  7. Bake for 35–40 minutes, or until a toothpick comes out clean.
  8. Cool in pan 10 mins, then unmold.

🍭 Variations & Tips:

  • Add cardamom or rose essence for a desi twist.
  • For crunch, mix in cashews or almonds.
  • Make cupcakes with the cake batter—bake 20–22 mins.
