Chocolate Peppermint Bundt Cake

🎄 Ingredients

For the Cake:

  • 1¾ cups (220g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • ¾ cup (180ml) vegetable oil or melted butter
  • 3 large eggs
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1 cup (240ml) buttermilk (or 1 cup milk + 1 tbsp vinegar)
  • ½ cup (120ml) hot coffee or boiling water (enhances chocolate flavor)

For the Chocolate Ganache:

  • 150g (5 oz) dark or semi-sweet chocolate, chopped
  • ½ cup (120ml) heavy cream

For Garnish:

  • Crushed peppermint candy canes or peppermint bark
  • Optional: whipped cream, chocolate curls, or powdered sugar

👩‍🍳 Instructions

1. Preheat & Prepare Pan

  • Preheat oven to 350°F (175°C).
  • Generously grease and flour a Bundt pan.

2. Mix Dry Ingredients

  • In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

3. Mix Wet Ingredients

  • In another bowl, whisk sugars, oil, eggs, vanilla, and peppermint extract until smooth.
  • Mix in buttermilk, then add hot coffee or boiling water slowly.

4. Combine

  • Gradually add dry ingredients to wet, mixing until just combined (batter will be thin — that’s okay!).

5. Bake

  • Pour batter into prepared Bundt pan.
  • Bake for 40–45 minutes, or until a toothpick inserted comes out clean.
  • Cool in pan for 15 minutes, then invert onto wire rack to cool completely.

🍫 Make the Ganache

  1. Heat cream until just about to boil.
  2. Pour over chopped chocolate. Let sit 2 minutes.
  3. Stir until smooth and glossy.
  4. Let cool slightly, then drizzle over the cooled cake.

🎉 Decorate

  • Sprinkle crushed candy canes or peppermint bark over ganache before it sets.
  • Optional: pipe whipped cream rosettes or dust with powdered sugar for a snowy effect.

  • Don’t overbake — moistness is key!
  • Use a good-quality cocoa powder for deep flavor.
  • Adjust peppermint to your liking — use less if you prefer a subtler flavor.
  • For extra peppermint punch, add chopped Andes mints or peppermint chips to the batter before baking.
