Fun Pot of Gold Cake

🍫 Cake Base: Rich Chocolate Cake

Ingredients (for 2 layers):

  • 1¾ cups (220g) all-purpose flour
  • ¾ cup (65g) cocoa powder
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs
  • ¾ cup (180ml) milk
  • ½ cup (120ml) vegetable oil
  • 1 tsp vanilla extract
  • ¾ cup (180ml) hot water or coffee (brings out chocolate flavor)

🎂 Instructions for Cake

  1. Preheat oven to 350°F (175°C). Grease two 8-inch or 9-inch round pans.
  2. Whisk dry ingredients in one bowl.
  3. In another bowl, whisk eggs, sugars, oil, milk, and vanilla. Add to dry ingredients.
  4. Stir in hot water or coffee last (batter will be thin — that’s good!).
  5. Divide between pans and bake for 30–35 mins or until toothpick comes out clean.
  6. Let cool completely.

🍦 Filling & Frosting Options

Vanilla Buttercream:

  • 1 cup (226g) unsalted butter, softened
  • 3–4 cups (360–480g) powdered sugar
  • 2–4 tbsp milk or cream
  • 1 tsp vanilla extract
  • Optional: gold food coloring or black food coloring for “pot” effect

Optional Filling Ideas:

  • Chocolate ganache
  • Rainbow sprinkles (for a “piñata” effect)
  • Marshmallows or gold-wrapped chocolates

🌟 How to Create the “Pot of Gold” Look

Option 1: Layered Piñata Cake (Hollow Center)

  1. Stack the two cakes with frosting in between.
  2. Cut a small hole (about 3–4 inch diameter) in the top layer’s center.
  3. Fill the cavity with chocolate coins, rainbow sprinkles, or candy pearls.
  4. Replace cut-out top or cover with buttercream.
  5. Frost cake in black or dark chocolate frosting to mimic a pot.

Option 2: Top Treasure Design

  • Frost whole cake dark (black, deep brown, or green).
  • On top, pipe a pile of gold coins using yellow/gold buttercream and top with gold sprinkles or chocolate coins.
  • Add a rainbow candy belt (like Airheads Xtremes or sour strips) arching from one side to the other like a rainbow pouring into the pot.
  • Optional: Pipe green shamrocks around the base or sprinkle edible glitter.
