For the Pancakes:
- 2 cups (250g) all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1¾ cups (420ml) milk (dairy or plant-based)
- 2 large eggs
- ¼ cup (60g) melted butter or oil
- 1½ tsp vanilla extract
- Gel food coloring (pink, purple, blue, yellow – pastel or vibrant)
Optional Add-ins:
- Sprinkles (rainbow or pastel, mixed into the batter)
- White chocolate chips
🎨 Toppings:
- Whipped cream or pastel-colored buttercream
- Sprinkles (stars, unicorn shapes, rainbow jimmies)
- Edible glitter or luster dust
- Mini marshmallows, rock candy, or candy pearls
- Unicorn horn topper (for photos!)
👩🍳 Instructions
1. Make the Pancake Batter:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, eggs, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed (don’t overmix).
- Divide batter into 4–5 small bowls and tint each with a different food coloring.
2. Cook the Pancakes:
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on top and the edges are set (about 1–2 min), then flip and cook the other side.
- Stack in color order for a rainbow effect (ex: purple on bottom, pink on top).
3. Decorate:
- Pipe or spoon whipped cream or frosting over the top pancake.
- Add sprinkles, glitter, and unicorn-themed decorations.

- Pink: beet powder
