Unicorn Pancakes

🧁 Ingredients

For the Pancakes:

  • 2 cups (250g) all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1¾ cups (420ml) milk (dairy or plant-based)
  • 2 large eggs
  • ¼ cup (60g) melted butter or oil
  • 1½ tsp vanilla extract
  • Gel food coloring (pink, purple, blue, yellow – pastel or vibrant)

Optional Add-ins:

  • Sprinkles (rainbow or pastel, mixed into the batter)
  • White chocolate chips

🎨 Toppings:

  • Whipped cream or pastel-colored buttercream
  • Sprinkles (stars, unicorn shapes, rainbow jimmies)
  • Edible glitter or luster dust
  • Mini marshmallows, rock candy, or candy pearls
  • Unicorn horn topper (for photos!)

👩‍🍳 Instructions

1. Make the Pancake Batter:

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk milk, eggs, melted butter, and vanilla.
  • Combine wet and dry ingredients until just mixed (don’t overmix).
  • Divide batter into 4–5 small bowls and tint each with a different food coloring.

2. Cook the Pancakes:

  • Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  • Pour ¼ cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on top and the edges are set (about 1–2 min), then flip and cook the other side.
  • Stack in color order for a rainbow effect (ex: purple on bottom, pink on top).

3. Decorate:

  • Pipe or spoon whipped cream or frosting over the top pancake.
  • Add sprinkles, glitter, and unicorn-themed decorations.

✅ Tips:

  • Use gel food coloring for bold color without thinning the batter.
  • Want natural color? Try:
    • Pink: beet powder
    • Purple: blueberry or ube powder
    • Yellow: turmeric or golden milk mix
    • Green: spinach or matcha
  • Let kids decorate their own stacks for interactive fun!
