Ingredients:
- Dry:
- 1½ cups (180 g) all-purpose flour
- 1½ tsp baking powder, ½ tsp baking soda, ½ tsp salt
- Wet:
- 1 cup (227 g) Greek yogurt
- 1 cup (200 g) granulated sugar
- 3 large eggs
- ½ cup (120 ml) extra-virgin olive oil
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350 °F (180 °C). Grease a 9×5″ loaf pan or springform pan and line it with parchment.
- Combine dry ingredients in a bowl.
- Whisk wet ingredients (yogurt, sugar, eggs, oil, vanilla) until smooth.
- Fold dry into wet just until no flour remains.
- Bake 50–55 min until a toothpick comes out clean.
- Cool, dust with powdered sugar, and optionally serve with fresh fruit or a dollop of yogurt
