Yogurt Cake

Ingredients:

  • Dry:
    • 1½ cups (180 g) all-purpose flour
    • 1½ tsp baking powder, ½ tsp baking soda, ½ tsp salt
  • Wet:
    • 1 cup (227 g) Greek yogurt
    • 1 cup (200 g) granulated sugar
    • 3 large eggs
    • ½ cup (120 ml) extra-virgin olive oil
    • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350 °F (180 °C). Grease a 9×5″ loaf pan or springform pan and line it with parchment.
  2. Combine dry ingredients in a bowl.
  3. Whisk wet ingredients (yogurt, sugar, eggs, oil, vanilla) until smooth.
  4. Fold dry into wet just until no flour remains.
  5. Bake 50–55 min until a toothpick comes out clean.
  6. Cool, dust with powdered sugar, and optionally serve with fresh fruit or a dollop of yogurt
