Boho Chic Cakes

Ingredients (fits 9‑inch cake + 2 cupcakes):

Cake:

  • 4 cups flour (≈500 g)
  • 4 cups sugar (≈800 g)
  • 3 tsp baking powder, 2 tsp salt
  • 2½ sticks room-temp butter
  • 2 tsp vanilla extract, 2 tsp almond extract
  • 1½ cups egg whites
  • 2 cups sour cream or Greek yogurt
  • 2½ Tbsp neutral vegetable oil

Buttercream Frosting:

  • 3 cups softened butter
  • 10 cups powdered sugar
  • 2 tsp kosher salt
  • ⅔ cup heavy cream
  • 1 Tbsp vanilla extract, 1 tsp almond extract

Note: For full coverage, increase ingredients by ~50%.

Instructions

  1. Bake Cake Layers
    • Preheat oven to 175 °C (350 °F).
    • Cream butter, vanilla, almond, sugar. Mix egg whites, then alternately add dry ingredients and sour cream/oil.
    • Divide into pans, bake until a toothpick comes out clean. Cool completely.
  2. Prepare Buttercream
    • Beat butter, gradually add sugar and salt. Add cream, vanilla, almond. Whip until fluffy.
  3. Assemble & Decorate
    • Stack cooled cakes with buttercream between layers.
    • Apply a thin crumb coat and chill briefly, then finish with textured or smooth buttercream.
    • For boho style: texture with spatula, add dried florals, pampas grass, or edible macramé piping.
