Moist Gingerbread Loaf

🧾 Ingredients (9×5‑inch loaf pan)

  • 2 cups all‑purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, room temp
  • ⅔ cup granulated sugar
  • ¼ cup molasses
  • 2 Tbsp freshly grated ginger (or 1 tsp ground)
  • 2 large eggs
  • ⅓ cup sour cream (or buttermilk)
  • 3 Tbsp neutral oil (like canola)
  • 2 Tbsp water
  • Extra sugar for pan/coating

👩‍🍳 Instructions

  1. Preheat & Prep Pan
    Heat oven to 350 °F (175 °C). Grease and sugar-coat or line a 9×5″ loaf pan.
  2. Mix Dry Ingredients
    Whisk together flour, baking soda, baking powder, cinnamon, salt. Set aside.
  3. Cream Butter & Sugar
    Beat butter and sugar until light and fluffy (~2–3 min).
  4. Add Molasses & Spices
    Mix in molasses, grated or ground ginger, then eggs one at a time.
  5. Combine Batter
    With mixer on low: add half dry ingredients, then sour cream-oil-water mix, then the rest of dry. Stir until just combined.
  6. Bake
    Pour into pan, smooth top, sprinkle with extra sugar. Bake 50–55 min, until toothpick shows a few moist crumbs. Tent with foil if browning too fast.
  7. Cool & Serve
    Let cool in pan 10 min, transfer to rack. Slice once fully cooled.
