Applesauce Cake

Ingredients (9×13 or 2-layer 8″ cake):

  • 2¼ cups all-purpose flour
  • 1 tsp baking soda & 1 tsp baking powder
  • 1 tsp ground cinnamon, ½ tsp ginger, & ¼ tsp nutmeg or allspice
  • ¾ cup granulated sugar + ½ cup brown sugar
  • 2 large eggs
  • 2 cups unsweetened applesauce
  • ¾ cup oil (vegetable or canola)
  • 1 tsp vanilla
  • Optional mix-ins: raisins and walnuts (≈½ cup each)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line pan(s).
  2. Whisk dry ingredients in a bowl.
  3. In another bowl, beat eggs, sugars, applesauce, oil, and vanilla until smooth.
  4. Stir dry into wet until just combined. Fold in optional raisins & nuts.
  5. Bake 25–40 min (25 min for sheet; 40 min for deeper pans), until a toothpick comes out clean .
  6. Cool before frosting or dusting.
