Blueberry Coffee Cake Recipe

✅ Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/4 cup milk
  • 1 1/2 cups fresh or frozen blueberries (if frozen, don’t thaw)

For the Streusel Topping:

  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 cup cold unsalted butter, cut into cubes

🧁 Instructions

  1. Preheat Oven
    Preheat to 350°F (175°C). Grease and flour an 8×8-inch (20×20 cm) baking pan or line with parchment paper.
  2. Make Streusel
    In a bowl, mix brown sugar, flour, and cinnamon. Cut in cold butter using a pastry cutter or fork until crumbly. Set aside.
  3. Prepare Cake Batter
    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
    • In a large bowl, cream butter and sugar until light and fluffy (2–3 minutes).
    • Beat in eggs one at a time. Add vanilla.
    • Mix in sour cream and milk.
    • Gradually add the dry ingredients until just combined.
    • Gently fold in blueberries.
  4. Assemble the Cake
    • Spread batter evenly in the prepared pan.
    • Sprinkle the streusel evenly over the top.
  5. Bake
    Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve
    Let cool for 15–20 minutes. Slice and enjoy warm or at room temperature.

  • Add a lemon zest to the batter for a bright twist.
  • Store leftovers covered at room temp for 2 days, or refrigerate for up to 5.
