Galaxy Chiffon Cake Truffles Class

🧁 PART 1: Chiffon Cake Base

🌟 Ingredients:

  • 1 cup (120g) cake flour (or sifted all-purpose flour)
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 4 large eggs, separated
  • ½ cup (100g) granulated sugar (divided)
  • ¼ cup (60ml) oil (vegetable or canola)
  • ¼ cup (60ml) milk
  • ½ tsp vanilla extract
  • ¼ tsp cream of tartar (optional, for egg whites)

✅ Instructions:

  1. Preheat oven to 325°F (160°C). Line the bottom of a 9×13” pan (don’t grease).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, whisk yolks, ¼ cup sugar, oil, milk, and vanilla until smooth.
  4. Add dry ingredients into yolk mixture and whisk to combine.
  5. Beat egg whites (with cream of tartar, if using) until foamy, then gradually add ¼ cup sugar and beat to stiff peaks.
  6. Gently fold whites into the batter in 3 parts to keep it airy.
  7. Pour into pan and bake for 22–25 minutes, or until springy and golden.
  8. Cool completely, then break into crumbs with fingers or a food processor.

🧈 PART 2: Frosting for Binding

Ingredients:

  • ⅓ cup (75g) unsalted butter, softened
  • ½ cup (60g) powdered sugar
  • 1–2 tbsp milk or cream
  • ½ tsp vanilla extract

Mix all until creamy and light. Add just enough to cake crumbs to bind and form balls that hold their shape.


🔮 PART 3: Forming the Truffles

  1. Mix chiffon crumbs and frosting to make a dough.
  2. Roll into 1-inch balls and chill for 30 minutes.

🌌 PART 4: Galaxy Glaze

Ingredients:

  • 200g white chocolate or candy melts
  • 1 tbsp coconut oil or neutral oil
  • Gel food coloring: black, purple, blue, pink
  • Edible glitter, silver stars, or shimmer dust

Instructions:

  1. Melt white chocolate with oil until smooth.
  2. Divide into bowls and color each one.
  3. Drop a few spoons of each color into one bowl without stirring too much.
  4. Dip each cake ball in the swirl for a galaxy marble effect.
  5. Place on parchment. Decorate with glitter or silver stars before the glaze sets.

  • Pre-bake chiffon cake to save time.
  • Let students shape and dip their own truffles.
  • Use skewers or forks for easy dipping.
  • Create individual decorating stations with glitter, shimmer, and star sprinkles.

🪐 Optional Fillings:

  • Add a small cube of ganache or jam in the center for a surprise!
  • Flavor frosting with raspberry, passionfruit, or lemon for a cosmic twist.
