Chocolate Fudge Cake

Ingredients (One 9×9-inch or two 8-inch pans)

  • 1¾ cups (250 g) all-purpose flour
  • 2 cups (400 g) granulated sugar
  • ½ cup (75 g) unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup hot coffee or hot water (enhances flavor)
  • ½ cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk or soured cream

Fudge Frosting / Ganache

  • 1 cup unsalted butter, room temp
  • 1¼–1½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1–2 tbsp milk or cream
  • OR for ganache style: 8 oz dark chocolate + ¾ cup heavy cream, heated and cooled

Instructions

1. Preheat & Prep

Preheat to 350 °F (180°C). Grease and line your pan(s).

2. Mix Dry Ingredients

In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.

3. Add Wet Ingredients

Add oil, eggs, vanilla, buttermilk, and coffee. Mix until just combined—don’t overbeat

4. Bake

Pour batter into pan(s). Bake 25–35 min (smaller pans bake faster) or until toothpick comes out with moist crumbs. Cool completely.

5. Make Frosting

For buttercream: beat butter, then add sugar, cocoa, and milk until fluffy.
For ganache: gently heat cream, pour over chopped chocolate, stir until smooth; cool until spreadable .

6. Assemble

Spread frosting between layers (if using two), then frost top and sides. Chill briefly to set.
