Simple Apricot Cake

🧾 Ingredients

For the Cake:

  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil or melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) plain yogurt or sour cream
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 6–8 fresh apricots, halved and pitted (or canned apricots, drained)
  • Optional: a sprinkle of brown sugar or sliced almonds on top

👩‍🍳 Instructions

1. Preheat Oven:

  • Set oven to 350°F (175°C). Grease and flour an 8- or 9-inch round cake pan or springform pan.

2. Mix Wet Ingredients:

  • In a large bowl, whisk together sugar, oil (or butter), eggs, vanilla, and yogurt until smooth.

3. Add Dry Ingredients:

  • Sift in flour, baking powder, baking soda, and salt. Stir gently until just combined — don’t overmix.

4. Assemble Cake:

  • Pour batter into the prepared pan.
  • Arrange apricot halves cut-side-up on top. Gently press them into the batter.
  • Optional: Sprinkle a tablespoon of brown sugar or sliced almonds for texture and caramelization.

5. Bake:

  • Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10–15 minutes, then transfer to a wire rack.

  • Dust with powdered sugar before serving
  • Serve warm with vanilla ice cream or a dollop of whipped cream
  • Drizzle with honey or apricot glaze for extra shine

  • No fresh apricots? Use drained canned or jarred apricot halves.
  • Add a touch of almond extract for a flavor boost.
  • Want it spiced? Add ½ tsp of cinnamon or cardamom to the batter.
