Simple Apricot Cake
🧾 Ingredients
For the Cake:
- 1 cup (200g) granulated sugar
- ½ cup (120ml) vegetable oil or melted butter
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) plain yogurt or sour cream
- 1 ½ cups (190g) all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 6–8 fresh apricots, halved and pitted (or canned apricots, drained)
- Optional: a sprinkle of brown sugar or sliced almonds on top


👩🍳 Instructions
1. Preheat Oven:
- Set oven to 350°F (175°C). Grease and flour an 8- or 9-inch round cake pan or springform pan.
2. Mix Wet Ingredients:
- In a large bowl, whisk together sugar, oil (or butter), eggs, vanilla, and yogurt until smooth.
3. Add Dry Ingredients:
- Sift in flour, baking powder, baking soda, and salt. Stir gently until just combined — don’t overmix.
4. Assemble Cake:
- Pour batter into the prepared pan.
- Arrange apricot halves cut-side-up on top. Gently press them into the batter.
- Optional: Sprinkle a tablespoon of brown sugar or sliced almonds for texture and caramelization.
5. Bake:
- Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10–15 minutes, then transfer to a wire rack.

- Serve warm with vanilla ice cream or a dollop of whipped cream
